White Chocolate Lava Cake with Orange Marmalade


- 150g white chocolate
- 100g unsalted butter
- 3 large eggs
- 3 tablespoons all-purpose flour
- 3 tablespoons of Finnegan’s Spread ‘Em’s Orange Marmalade with lemon zest
- Powdered sugar, for dusting
- Fresh orange zest, for garnish (optional)


1. Preheat your oven to 180°C (350°F). Grease and flour individual ramekins or small oven-safe dishes.

2. In a heatproof bowl, melt the white chocolate and butter together over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

3. In a separate bowl, beat the eggs until frothy. Gradually add the melted chocolate mixture while whisking continuously.

4. Sift in the flour and gently fold it into the batter until just combined.

5. Divide half of the batter among the prepared ramekins, then add a spoonful of orange marmalade to the center of each. Top with the remaining batter, ensuring the marmalade is completely covered.

6. Place the ramekins on a baking sheet and bake for 12-15 minutes, or until the edges are set but the centers are still slightly jiggly.

7. Remove from the oven and let the cakes cool for a few minutes. Use a knife to loosen the edges, then carefully invert each cake onto a serving plate.

8. Dust with powdered sugar and garnish with fresh orange zest, if desired. Serve immediately while the centers are still warm and gooey.
